Garbanzo Bean Brown Rice with Dijon dressing

This healthy quick and easy salad combines garbanzos, brown rice and dijon dressing- a trio that when paired together carries a punch and a crunch!

There is this great service that is offered to people in this generation. It is called, DELIVERY. And i think it is maybe one of the best inventions/discoveries of all time. How in the world did we ever live without it! I mean, how did we ever actually go to the store and PICK out our grocery’s? Crazy concept. Especially in new york in a walk-up building? All I can say is I’m sure happy the people of New York discovered it before I moved here. And I am happy to say that we help to keep the grocery delivery guys in business. There are a few things I am passionate about and Prime Now is a big one that I will sell to anyone!

Because we live on a 4th floor walk-up, i carefully think about each item i have to haul up my 64 stairs. I have figured that whatever i carry in my arms, it is in addition to my baby and the heavy hand of my almost 3 year old who thinks its great fun to lean back ON. EVERY. STAIR. So, thanks to delivery, I now am a that much happier wife/mom because I have that much less to lug up the stairs!DSC_0113

I shop at Trader Joe’s for lots of things. Like all the trader joe’s specials (i.e.: pretzels, goat cheese, $4.99 pizzas:), apples, chocolate covered sea salt almonds etc) but since discovering Prime Now, those sweet delivery guys will bring up bring up all my heavy things…flours, milks, cottage cheese, rice and anything else that seems like a fair price/dont want to carry up myself.

The only tricky thing is one must reach the $15 price range to have Prime Now deliver. BUT thanks to my good shopping skills, i have no problem getting to that price point. I just add something that I might need in the future! For example that is how this recipe came about! I needed about $4.00 worth of another item to equal my $15.00 limit, so I quickly found short grain brown rice to add to my cart! Easy peasy.

OK now to the recipe. Since I have been trying to follow a Candida Diet, (due to my influx of Candida from nursing ), I was looking for a quick recipe that followed the rules. I found a good starting recipe on the side of the Lundberg Short Grain rice package! I tweaked it just a bit and it turned out great! I added chopped chicken for an extra protein, then garnished with goat cheese and some parsley. Even Jude thought it was tasty!

About 88% of the time, i don’t bother on making the dressing when a salad calls for it. I guess I’m a plain jane that way. Well, this time, it looked especially tasty so I made a similar one with a few alterations. I decreased the olive oil because I feel that 1/2 cup olive oil was a bit much and unnecessary. And i must say, that 1 tablespoon of olive oil was plenty. More and i think it would be too greasy. Olive oil, along with apple cider vinegar and dijon mustard, i’d say that I now am a dressing liker. Hope you enjoy!

the candida diet is not an easy route, but if it means I can continue to nurse this sweet face? I’ll commit . theo was a recipient as well, just through a different route:)

Garbanzo Bean Brown Rice with Dijon dressing

Ingredients

Scale
  • 3 cups cooked rice
  • 1 bell pepper, diced
  • 1/4 fresh basil and parsley, chopped
  • 1/2 cup sliced almonds
  • 3/4 can garbonzo beans, rinsed and drained
  • 1 cucumeber, diced
  • goat cheese, (optional)
  • 1/4 cup currants (optional, leave out for candida dieters)

DRESSING:

  • 1 tablspoon olive oil
  • 1/4 cup apple cider vinegar
  • 1 tablspoon dijon mustard
  • 1 tsp honey (optional)
  • salt and pepper to taste

Instructions

Add cooled cooked rice and all other ingredients to bowl. Stir to mix well. Serve with goat cheese and top with parsley.
