Sometimes I just need a little something to get me through to the next meal. Like a little pick me up. I found a little something that does just that. And I’m not mad it happens to be chocolate. My usual go to’s are Trader Joe’s Dark Chocolate, Walnut, Fig and Date bars. Dont get me wrong because in no way shape or form am I meaning to recreate this bar. It cannot be re-created and I am perfectly happy with purchasing them at Trader Joe’s and giving them all the credit. Credit given. However…when I run out is the issue.
So here is another option for me. If I can not eat the entire thing in 1 day. (eye roll for no self control)
To decrease the amount of honey, I blended up some dates instead. I have a Blendtec and blend the dates with my nut butter. I feel like they blend easier that way than on their own.
Another plus with using dates, is that This is the clumpy kind so sometimes I add a little more honey or nut butter to help it stick together.
Chocolate Coconut Chia Seed Granola
SERVING SIZE: 9x13 in pan
TOTAL TIME: 25 min
3 cups oats (finely chopped)
1/4 cup unsweetened shredded coconut
1/4 cup unsweetened cocoa powder
1/4 cup chia seeds
1/4 cup flax seeds
1/4 cup coconut oil, melted
1/3 cup honey
1/2 cup nut butter
1/2 tsp salt
5 dates, (I blend with my nut butter, could also chop finely and mix in)
1 tsp vanilla
Mix wet ingredients together, then add dry ingredients. Press into pan or spread thinly on cookie sheet. Bake @ 350 degrees for 15 min. Crumble or cut into bars. Store in fridge for longer lasting deliciousness.
**not super sweet. Add more honey if you want sweeter
On another note, theo scoots all over. His favorite cupboard happens to be the one with the oatmeal and cream of wheat. I dont know how he manages to open the cream of wheat jar! I’m embarrassed to say that he has opened the jar and spilled the cream of wheat more than once. I mean, all it takes is 3 seconds. I swear I watch my children closely.
