Honey Wheat Irish Soda Bread

How about enjoying a nice honey wheat Irish soda bread for a change?? Filled with raisins and whole wheat flour obvs

My mother has red hair. And my mother loves a good bagpipe. She also loves any good tartan. All year long. And some good Irish soda bread. AND she loves to claim every percentage of Irish she is made of. 

Therefore– because of her affinity towards the Irish culture, we grew up whole heartedly celebrating St. Patrick’s day.  She did it all–green pancakes, green milk, green jello, green shirts, green bread… you think of it, I’ve probably experienced/tasted it. However, the best of all was the corned beef and the Irish soda bread. Can’t beat it.

 

AND even though Irish Soda bread isn’t Irish turns out. So there you go. Irish Soda Bread isn’t really Irish. But there’s no Santa, and that doesn’t make Christmas any less awesome, does it? Thus, I’ll continue with my Leprechauns, green french toast casserole and my Irish Soda bread traditions. 

And in my opinion, you can’t buy Irish Soda Bread. It just won’t taste the same as if you make it yourself.

Let me present to you this Honey Wheat Irish Soda Bread. It is so simple, one doesn’t even need to haul their mixer out from under the sink! (because who has enough counter space to leave it out? (Not me, says my tiny kitchen with tiny counter space) You can just use one bowl.

Go ahead and mix it all in that one bowl. THEN, for the mix-ins, you can use a mixture of raisins, currants, cranberries, golden raisins…whatever! The OG’s call for currants. Just in case you’re wondering:)

Once it’s all mixed…Dust your pan/baking stone with cornmeal or I sometimes use cream of wheat…

And lay that blob down.

Then, give the rounded dough a nice criss cross in the top.

This recipe requires no yeast, and so therefore no rising which equals more immediate delicious bread!  And I also sprinkle some salt on the top for just a little something extra.

I mean, that center?? Its so dense and moist!

And then, before you know it….you will have eaten the entire thing and it is gone. I hate when that happens.

Honey Wheat Irish Soda Bread

Ingredients

Scale
  • 1 cup all purpose flour
  • 2 1/2 cups white whole wheat flour
  • 1/2 cup honey
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 2 cups non-fat greek yogurt
  • 2 eggs
  • 3/4 cups raisins/currants (can use either or both) 

Instructions

  1. Preheat oven to 350 degrees.
  2. Mix dry ingredients in bowl including raisins.
  3. Beat eggs and yogurt in a smaller bowl. Add egg mixture to flour mixture. It will be thick.
  4. Knead into a ball, dust with cornmeal or flour and cut a shallow X in the top. Sprinkle with salt. Place on cornmeal dusted baking stone.
  5. Bake for 40 min or until golden brown on top. ENJOY!
