Eggless Homemade Vanilla Ice Cream

An ice cream so yummy you’ll all scream for Eggless Homemade Vanilla Ice cream that is made with simple ingredients and really brings home the classic American dream

So for generations and generations (as the tale goes), Clifford men have been enjoying a nightly bowl of ice cream prior to retiring to their room for the night. Whether that’s while enjoying a basketball game, enjoying company, enjoying their alone time, or post-nap… the tradition continues.

Although my Clifford man has never been known to turn away an ice cream flavor, if it were up to him- he would choose vanilla. Homemade vanilla ice cream. Plain old plain vanilla ice cream. I choose Jeni’s Reduced Sugar Roasted Strawberry Buttermilk Ice Cream. But to each his own!

Lucky for him….I also like ice cream and LOVE homemade vanilla ice cream. And the kicker? An extremely easy recipe that doesn’t involve eggs. Therefore easier, faster and yummier:)

Growing up, I thought the only wedding present one could recieve was an Ice Cream Maker pictured below..

….and man I had to search for this picture! Like I’ve been married for decades? And its already extinct. This is the rock salt version and it takes ALL day. It turns out fabulous but its rather archaic.

My mother did indeed gift this to US for our wedding. And we sure got our good use out of it the past 7 years. It has been manifest by the many hours spent crushing ice with a fry pan, running in and out of the bathroom where the only plug was near the sink so we could adequately drain the ice cream canister when the ice melted… only to re-layer it with our ‘hand crushed’ ice and rock salt. Then, waiting ever so patiently for the blue canister to stop spinning because of the cold ice cream. Sometimes taking a gazillion hours!! But, we pressed forward because the reward was so excellent and there was no other way.  

When we moved to New York and couldn’t dedicate a whole closet for our ice cream maker…I sadly listed it on craigslist and it quickly found an excellent home! I had so many responses for this antique. ha! Anyway, as a consolation gift to US we purchased a cuisinart ice cream maker.

And this beauty is substantially smaller in size AND it comes with two canisters. Therefore we always have one in our fridge juuussst for ice cream making emergencies. And believe me, they have happened and we are always glad to have it up and ready.

She is so lovely and fits perfectly in our small surroundings. And although she does not produce the volume of the old blue churn and chill that we loved so deeply, she does the trick. And the 20 min it takes is much more conducive to our lifestyle. The secret to making it take 20 min is pouring your liquid ingredients into a frozen canister.

I mean, the only ingredients you need are ones you probably already have! Heavy Whipping cream (who doesn’t always have a pint of that lying around), milk and sugar, vanilla and salt!

The original recipe calls for Half and Half. That works great if you happen to have that on hand when you decide you need homemade ice cream RIGHT NOW! I usually don’t so thats why I don’t really use it often. Also, sometimes when I use half and half AND the cream I can feel the butter from all the cream fat reside on my lips and its a big creamy for my liking. A bit heavy. I like to use either whole milk or 2% milk alongside with whipping cream. Because the fat content is not as high as it is with Half and Half and cream, the ice cream is a little bit more watery/icy…but I prefer that. My stomach tolerates that better than the full fat cream…as well as my love handles.

The only disclaimer is the less fat content that is used…the more icy your ice cream will be because it has less cream and more water content. For this reason, lower fat dairy products often have carrageenan in them to help with the texture. I choose to have icy ice cream as opposed to carrageenan.

Ok, so now for the recipe of the American holiday. Its so easy and pure and just plain old plain classically delicious vanilla. I’ve become picky with my vanillas lately because I feel like they always leave that processed after taste….or else they are sooo heavy that i can’t pick myself up off the couch when i’m done with my bowl. This version has been tried and true and you can adjust the fat content slash sugar content as you wish to your liking and taste buds which is so nice.

The Original recipe calls for:

2 cups heavy whipping cream

2 cups half and half

1 cup sugar

2 tsp vanilla

pinch of salt.

I found that if I substitute cow’s milk…either whole or 2 percent or any other variety, I can decrease the sugar content because of the sugar that is in the milk.

This is what has been tried and true in our household-

2 cups heavy whipping cream

2 cups milk (2 percent is usually my choice)

3/4 cups sugar

2 tsp vanilla

pinch of salt

So just experiment and see what combination works best for you! But please know how awesome and fun it is to have HOMEMADE VANILLA ICE CREAM!!! Oh yeah and if you don’t have access to the cuisinart ice cream maker…give me a ringer and I’ll hand it right over so you can also experience the magic of homemade ice cream in 20 min.

Ingredients

Scale
  • 2 cups heavy whipping cream
  • 2 cups milk
  • 3/4 cup sugar
  • 2 tsp vanilla
  • pinch of salt

Instructions

  1. IMPORTANT: dont get out the canister until you are ready to pour in the mixture.
  2. Mix all ingredients together in a bowlOnce you are all ready to pour it in, quickly get it out of the freezer, turn on the cuisinart and pour in as it is spinning.
  3. Watch the magic for approx 20 min or until the ice cream is thick.
  4. NOTE: it will not be rock hard. It will be more the consistency of soft serve. If you want hard hard, place in freezer..if you can make it last that long:)

Notes

*Depending on whether or not you use half and half AND cream of milk and cream, adjust the sugar as needed. Half and half has ZERO sugar, which may mean you need to add more sugar…like 1 cup instead of 1/2 cup. Because milk is high in sugar, you can decrease the sugar to 1/2 cup total. Enjoy!
