This gluten free almond flour pumpkin bread incorporates the banana, the zucchini AND the pumpkin. It is healthy and refined sugar free. Perfect for anyone who likes fall–on a fall day:)

- 3 cups almond flour
- 2 tsp baking soda
- 1 tsp salt
- 1 tsp vanilla extract
- 2 tsp cinnamon
- 3 eggs, beaten
- 1 tsp pumpkin pie spice
- 1/2 cup honey
- 1 cup ripe bananas (approx. 2 large)
- 1 cup shredded zucchini
- 1 cup pumpkin puree
- 1 tablespoon coconut oil
Instructions
- preheat oven to 350 degrees and line 2 loaf pans with parchment paper
- mix dry ingredients in bowl
- add beaten eggs, banana, zucchini, honey and coconut oil
- mix until combined.
- bake for 30-35 min until toothpick comes out clean.
