WARNING: This Bandera Macho Chicken Salad with Dried Corn is NOT a side Salad, it is macho. literally. it is sure to satiate you and your food loving guests (with or without protein)!
Ingredients
Scale
- 1 lb boneless, skinless chicken Breast
- 1 Tablespoon olive oil
- 1 cup Almond meal (or bread crumbs)
- Salt and pepper to taste
- Greens. (kale or spinach)
- 3/4 cup Dried Corn *
- 1/2 log Goat Cheese
- 1 cup cherry tomatoes, sliced
- 1 avocado, chopped
- 1 cup dates, pitted and chopped
- 1/2 cup slivered almonds
- fresh juice of lemon OR lime
Instructions
CHICKEN
Add approx 1 tsp olive oil to sauté pan. Add chicken, salt and pepper and almond meal. (enough to cover). Saute on medium low until chicken is cooked through.
SALAD
Toss all ingredients together. Finish off with juice of lemon or lime.
Notes
*you can also have this salad without meat OR with rotisserie chicken!
