STIR FRY-
- 2 boneless chicken breasts
- 1/2 medium onion [sliced]
- 1 red bell pepper
- 1 yellow bell pepper
- 1 cup broccoli
- Salt and Pepper
- 2–3 Tablespoons olive oil
- 4 cups cooked rice [brown or white]
- Cilantro and peanuts for garnish
HOMEMADE THAI PEANUT SAUCE- [or store bought]
- 1/4 cup honey
- 1/4 cup peanut butter [chunky is best]
- 2 tsp olive oil
- 2 tsp sesame oil
- 3 Tbs soy sauce
- 1/4 tsp cayenne pepper
- 1/4 tsp ginger
- 2 tsp minced garlic
- 2 tsp sesame seeds [optional]
- 1/4–1/2 cup warm water for consistency
