Ingredients
Scale
- 3 cups cooked rice
- 1 bell pepper, diced
- 1/4 fresh basil and parsley, chopped
- 1/2 cup sliced almonds
- 3/4 can garbonzo beans, rinsed and drained
- 1 cucumeber, diced
- goat cheese, (optional)
- 1/4 cup currants (optional, leave out for candida dieters)
DRESSING:
- 1 tablspoon olive oil
- 1/4 cup apple cider vinegar
- 1 tablspoon dijon mustard
- 1 tsp honey (optional)
- salt and pepper to taste
Instructions
Add cooled cooked rice and all other ingredients to bowl. Stir to mix well. Serve with goat cheese and top with parsley.
