Homemade Red Enchilada Sauce {with greek yogurt}

Description

A Red Enchilada Sauce that is simply spiced and delicious. It’s easy to make, includes options for spicy OR mild and is made creamy from plain Greek Yogurt! 


Ingredients

Scale
  • 2.5 Tablespoons olive oil
  • 3 Tablespoons all-purpose flour
  • 2 1/2 tsp chili powder
  • 1 tsp minced garlic (or less)
  • 3/4 tsp salt
  • 1/4 tsp cumin seeds
  • 1/2 tsp dried oregano
  • 3 cups chicken broth
  • 4 Tablespoons tomato paste
  • 1/4 cup chopped onion, sautéed 
  • 1/2 cup non-fat greek yogurt

Instructions

  1. In a medium saucepan, add oil and saute onions until translucent. Add garlic.
  2. Add flour slowly to the saucepan and stir stir stir. The mixture will be thick and pasties. Turn heat to low and slowly add chicken broth and tomato paste.  Mix mix to avoid getting any lumps. (except the lumps from the onions) 
  3. Add the remaining ingredients and cook until thickened. Approx 10 min. Stirring contantly. Can blend if you want extra smooth.)
  4. Remove from stove and stir in yogurt. (If you stir in yogurt while cooking, the yogurt will curdle). Enjoy!
