How about enjoying a nice honey wheat Irish soda bread for a change?? Filled with raisins and whole wheat flour obvs


Ingredients

Scale
  • 1 cup all purpose flour
  • 2 1/2 cups white whole wheat flour
  • 1/2 cup honey
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 2 cups non-fat greek yogurt
  • 2 eggs
  • 3/4 cups raisins/currants (can use either or both) 

Instructions

  1. Preheat oven to 350 degrees.
  2. Mix dry ingredients in bowl including raisins.
  3. Beat eggs and yogurt in a smaller bowl. Add egg mixture to flour mixture. It will be thick.
  4. Knead into a ball, dust with cornmeal or flour and cut a shallow X in the top. Sprinkle with salt. Place on cornmeal dusted baking stone.
  5. Bake for 40 min or until golden brown on top. ENJOY!
