Description
This healthy Coconut Pecan Granola is made with simple ingredients and sweetened with Maple Syrup. All in all, its baked to perfection and ready in 30 min!
Ingredients

- 2 cups oatmeal
- 1 cup cracked oats
- 1/2 cup unsweetened coconut
- 1/2 tsp salt
- 2 tsp cinnamon
- 1 tsp vanilla extract
- 1/2 cup chopped pecans
- 1/4 cup chopped almonds
- 1/4 cup coconut oil
Instructions
- Preheat oven to 350 degrees.
- Mix all dry ingredients in a large bowl.
- In another smaller bowl, mix wet ingredients.
- Add wet to dry.
- Spread onto lined jelly roll pan.
- Bake for 25 min or until browned and toasted.
- Let cool for chunky granola.
Notes
* I used fresh coconut, but dry, unsweetened coconut can also be used.
