Description
This healthy gazpacho comes together in min and involves only the ingredient itself! No cooking needed! Tomatoes + cucumber + red bell pepper + garlic + onion + red wine vinegar + salt and pepper. It is the perfect cold soup for any day of the week.
Ingredients

- 2 lbs tomatoes [Heirloom or Roma]
1/2 white onion - 1 red bell pepper
- 1 cucumber
- 2 garlic cloves
- 2 Tbl red wine vinegar
- 1 tsp salt
- Pepper to taste
Instructions
- Slice and deseed the tomatoes removing all the seeds and the mushy part. Leaving only the meat of the tomato. [doesn’t have to be perfect!]. Then place in a blender.
- Add all other ingredients
- blend well to desired consistency and enjoy!
- Drizzle balsamic glaze and chop fresh basil on top.
- * can also serve with toasted bread or crackers.
