Easy & Healthy Tomato Gazpacho [no dairy]

Easy AND healthy Tomato Gazpacho that can be made in min. Made dairy free with tomatoes + onion + bell pepper + cucumber + garlic. [NO dairy!]

This easy and healthy tomato gazpacho came about over the summer when we were traveling. We were in Europe for about 1 month and we had such a great time. The entire time. Funny how vacations can do that to you:) No one fought, we all loved each other and were so compromising….it was fantastic. My only complaint was the food in Paris. The cheese and the bread were good for about 3 days. Until it backfired and really affected our bowels in the wrong ways:)

I found out that finding food that is nutritious and tastes good can be tricky on vacation. I learned it just takes some planning and some vacation grocery store hunting. But it can be done!

One particular day in Paris, I just wasn’t feeling anything meat and cheesy. I was about to pass on ordering when I saw Gazpacho on the very bottom. I ordered it and was hooked! It was so delicious and fresh and light.

And, I found it at all the grocery stores! I was so happy that I then had it in my purse every day following…JUST in case I didn’t find anything on the menu that jumped out at me. It was a life saver! There were a few brands but all basically the same:)

So, naturally, when we returned back to New York, I had to find a way to make it my own! After much trial and error, I found just the right ingredients and the perfect proportions.

Luckily for me, New York weather has approved Gazpacho for longer than usual. Because after all, not even a “chilly” 74 degrees would call for a hot soup. Fingers crossed for a short winter!

INGREDIENTS:

  • TOMATOES
    • I love Heirloom tomatoes…but also think Roma work fine! I use about 4 tomatoes…or more if you are using small ones.
    • No need to peel the tomatoes. Just be sure to remove the hard core and most of the seeds. You only use the outer ring of the tomato. No juice OR seeds. It makes for a smoother soup.
  • CUCUMBER
    • I use only half of a large English cucumber when using about
  • ONION
    • Just toss in half of the onion
  • GARLIC
    • I prefer fresh but minced would work just fine!
  • BELL PEPPER
    • I have used both green and red…red is my preferred!
  • RED WINE VINEGAR
    • the vinegar gives it a nice little zing. And 2 Tbls will do the trick!
  • SALT AND PEPPER
  • BASIL
    • fresh is best

MAKE the chilled soup

Throw all ingredients in a blender and blend until smooth!

Garnish with basil leaves and drizzle with balsamic glaze if you like. Enjoy!

Description

This healthy gazpacho comes together in min and involves only the ingredient itself! No cooking needed! Tomatoes + cucumber + red bell pepper + garlic + onion + red wine vinegar + salt and pepper. It is the perfect cold soup for any day of the week. 


Ingredients

Scale
  • 2 lbs tomatoes [Heirloom or Roma]
    1/2 white onion
  • 1 red bell pepper
  • 1 cucumber 
  • 2 garlic cloves
  • 2 Tbl red wine vinegar
  • 1 tsp salt
  • Pepper to taste
  •  

Instructions

  1. Slice and deseed the tomatoes removing all the seeds and the mushy part. Leaving only the meat of the tomato. [doesn’t have to be perfect!]. Then place in a blender.
  2. Add all other ingredients
  3. blend well to desired consistency and enjoy! 
  4. Drizzle balsamic glaze and chop fresh basil on top. 
  5. * can also serve with toasted bread or crackers.
