Brownies that are quick and made in ONE bowl, not too chocolatey and are great for any brownie base!
I have been making this recipe for decades!! Thanks to my bestie college roommate Whit. These were our go to. Like the “eat a slim fast in the morning and a pan of these brownies after school” kind of brownies. I mean, that’s the kind of power you have as a college student!
They are adapted from this recipe. We made a few tweaks–like replaced the vegetable oil for butter, {because no one should ingest vegetable oil} and we don’t use the walnuts. We also added chocolate chips.

These are my go to brownie when I need to whip up something quick for a treat after a game, and my brownie base for my Jude’s Brownies with toasted marshmallows and homemade chocolate frosting. They hold up well and are just an all around good brownie.
WHAT MAKES THEM SPECIAL?
1. ONE BOWL!
I love these brownies because they can be made in ONE bowl. However, my caveat is you must mix in the baking powder with the flour and the salt still. Here is how you do it.
Once you have mixed the sugar + butter + eggs, add the flour next. Never scooping of course, always spooning:)
After adding the flour on top of the butter, egg, and sugar mixture, DO NOT stir it in right away. Simply dump the baking powder and salt on top of the mound of flour. THEN Using the same measuring spoon you used for the baking powder, gently mix the baking powder + salt directly into the flour layer on top. Then add the cocoa powder. It is ont so crusial to add that to the flour mixture before stiring because it is brown so you will see it if it is not stirred in all the way.
So, stir just the dry ingredients together until they are evenly combined with the flour. Once the dry ingredients are fully blended, then mix everything into the butter and sugar mixture until just combined.
Tada!! Only one bowl!! That’s my secret:)
2. They are STURDY
This recipe is not crumbly or too gooey and can be used as a brownie base for all your brownie base needs! Or if you need a classic old brownie to top with white frosting ghosts. ha.

Brownies that never fail! Just enough chocolate, sturdy for any topping, and easy to make in one bowl!
Ingredients
- 1 3/4 cup white sugar
- 1 cup butter
- 2 tsp vanilla
- 4 eggs
- 1 cup flour
- 2/3 cup unsweetened cocoa powder *
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 bag of chocolate chips**
Instructions
- Preheat oven to 350
- Grease or line your 9×13 baking dish.
- Mix sugar + butter + vanila in a medium bowl.
- Add room temp eggs and stir until well combined.
- Add flour + baking powder + salt. Stir just until combined. Add chocolate chips if using.
- Spread in pan and bake until knife or toothpick comes out with only a few crumbs. Approx 25 min.
- Let cool before cutting.
Notes
*COCOA POWDER = if using Trader Joes, increase to 1 cup. TJ’s is not very dark so you must add more!
**CHOCOLATE CHIPs- these are optional! You could use however many you want. They do increase the amount of brownie…
