“Jude’s Brownies” – Brownies with toasted Marshmallows and homemade chocolate frosting

Rich, fudgy brownies topped with toasted gooey marshmallows and a thick layer of homemade chocolate frosting. An easy dessert that disappears fast.

These brownies have been a stable in my dessert book since I was in high school. This is how I had friends actually. My mom would whip these up and my friends loved me! I’m trying to replicate the same kindness for my kids:) And, thus, these are Jude’s favorite dessert of choice. I did my job.

WHAT MAKES THEM SPECIAL?

Regular brownies are FINE, but just fine. They need a little something extra to really make them the star of the show and adding marshmallows and chocolate frosting is what does the trick!

However, there are a few tips I’ve learned over the years of the many gazillion times I have made these delicious Toasted Marshmallow topped Brownies with Homemade chocolate frosting.

STEPS:

1. MAKE YOUR BROWNIES OF CHOICE!

My favorite brownie recipes are these!

Whatever the recipe is you choose, make sure to read the pan size correctly. If the recipe you are using calls for 9 x 9 in pan or an 8 x8 in pan….DOUBLE THE RECIPE to use a 8 x 13 in pan. I always make at least an 8 x 13 because there is never enough to go around and for all the work? Might as well have some leftovers.

If making for a crowd, (more than my family:), then I do a 13 x 18 in jelly roll pan, that is TRIPLE most recipes. The Brownies are a tiny bit thinner but I think if you quadruple the recipe, it is too thick.

2. TOP WITH MARSHMALLOWS and BROIL

Once you have determined your brownies they are baked, (tested by sticking them with a toothpick or a fork and it comes out clean) it is time to top them with the mini marshmallows. DO NOT OVERBAKE.

You can either remove them from the oven and place the baked brownies on top of the stove while you add the marshmallows, or you can open the oven door, pull out the rack and then–careful not to burn yourself–sprinkle the mini marshmallows over the top, arranging in single layer.

After the marshmallows are arranged in a single layer, turn the oven on to BROIL, pop the pan back in the oven and watch them toast to a perfect toasted marshmallow color!

(If they do burn, you can wait until they cool and then remove the top and try again….I’m a pro at that:))

3. ADD THE FROSTING

When the mini marshmallows are toasted to perfection, remove them from the oven and let them cool completely before frosting them. If you frost them when they are still warm, the frosting will melt off.

Although, I’m sure you could use store bought frosting…that would be gross so make it homemade!!! Its easy! And it’s HERE!

Whip the frosting ingredients in your mixer until you reach the desired consistency. The desired consistency is medium, stiff peaks. So the thickness is easy enough to frost but not too soupy that it won’t set up. Frosting is very generous. If it’s too thick, add more milk. If it’s too runny, add more powdered sugar. BUT, err on the stiff end. If it’s too runny and you have to add more powdered sugar, the frosting can separate and look spotty. Still tastes fine though, so it’s better to have slightly separated frosting than to have it too runny:)

4. LET THE BROWNIES SET BEFORE CUTTING!

Yep, just that. Don’t cut them before the frosting has had time to set on the top. They are best the next day after everything has been married to each other overnight.

*For cleanest cutting: Place the finished product in the fridge to really set. They cut better cold! Then, be sure to wipe your knife off in between each slice to keep the crumbs off.

These are sooo simple to make and the outcome is extremely divine! People will be dying for more!!!

Recipe for brownies

2 bags of mini marshmallows *

Chocolate frosting

Instructions

  1.  Bake brownies according to recipe. {don’t forget to make enough for the pan you are baking in!}
  2. While brownies are baking, make the chocolate frosting.
  3. When the brownies are done baking, check doneness with a toothpick. Toothpick should come out with a few crumbs on it. DO NOT overbake! If the brownies are done, open oven door and sprinkle the desired amount of mini marshmallows on top. COVER entire brownie with marshmallows! No brownie showing.
  4.  Broil for a few min, {approx 3 min} until the marshmallows are toasty and brown.
  5.  Remove from oven and let cool a little before frosting. Wait about 10 min.
  6. Let cool completely before covering and let set in the fridge or overnight before cutting for cleanest cut.
  7. Devour!!!

Notes

*you will only need 1 bag of mini marshmallows if using a 9×13 in pan.
