Cherry Balsamic BBQ Chicken Tacos

These Cherry Balsamic BBQ Chicken Tacos put the BBQ and the taco in all the right places with butternut squash, BBQ sauce and just the right amount of kick.

There is this great place across the street called Oaxaca Tacos. And being that it is right across the street…we have frequented it frequently:)

They have this one specialty taco called the Korean taco. It’s sweet and a little spicy and very tasty! Well, since I don’t have a money tree in my house (I don’t have a backyard to have a tree), I sometimes have to make do with whats in my kitchen. Wawa.

So as I was looking around in my fridge the other day, and then looking out my window to Oaxaca, I found just the right ingredients to make my own version of a Oaxaca taco. 

I found cherry preserves, corn tortillas and chicken! Awesome. My take on the Korean BBQ tacos?? uhhhh, ok not so korean and not so oaxaca…just the BBQ part I guess.

my ingredients:

CHICKEN-

I buy my organic chicken in a family style pack that includes 2 split breasts and 4 drumsticks at TJ’s. I frequently use this for my chicken.

It is easy. Just rub a little olive oil on the top, squeeze some limes over the top and sprinkle it with salt and pepper. Bake it covered for about 45 min @ 400 degrees.

the BBQ sauce:

While the chicken is cooking, I make the Cherry Balsamic BBQ sauce.

Start with chopped onions sautéed in a little olive oil. Then, add garlic and continue to sauté until golden and fragrant.

Add 1 cup of diced can of tomatoes + 2 Tbsp Balsamic vinegar + 3/4 cup cherry preserves (also a tj’s special). Let simmer until thickened.

the taco toppin’s:

As the sauce is simmering– do the following.

  • dice the butternut squash, tossed it with about 1 tsp maple syrup, 2 tbsp water or olive oil, sprinkle with salt and pepper and sauté until soft about 20 min.
  • add the diced cucumber
  • add shredded cabbage
  • sprinkle the taco with freshly grated Parmesan cheese. (as all of those were neighboring ingredients to my chicken and cherry preserves in the fridge).

We serve all construction trucks who will join us at the table.

Ingredients

Scale
  • 2 split chicken breasts
  • 4 drumsticks
  • 1 tsp olive oil
  • salt and pepper to taste
  • lime
  • corn tortillas
  • 1 butternut squash, {cubed}
  • 1 tsp maple syrup
  • shredded cabbage
  • cucumber {sliced}
  • 2 Avocado {sliced}
  • Reggiano cheese {shredded}

CHERRY BALSAMIC BBQ SAUCE

  • 1 tsp olive oil
  • 1/3 cup chopped onion
  • 1 garlic clove, (minced)
  • 1 cup canned diced tomatoes
  • 3/4 cup cherry preserves
  • 2 Tbsp Balsamic Vinegar
  • 1 tsp Dijon mustard

 


Instructions

  1. Bake @ 400 for 35 min.
  2.  Rub chicken pieces with olive oil and salt and pepper, squeeze lime over chicken.
  3. In small sauce pan, sauté onion until golden and add garlic. Cook for 2 min.
  4. Add remaining ingredients and simmer until thickened, about 10 min. Brush on top of done and replace chicken back in oven for an additional 10 min.
  5.  Dice butternut squash and place in sauté pan.Drizzle maple syrup and 1/4 cup water in sauté pan and sauté over medium heat until soft. Salt and pepper to taste
  6. Assemble tacos with shredded cabbage, sliced cucumbers, butternut squash, avocado and sprinkle cheese over top. ENJOY!
