tuesday tip: How to mAke Jude’s Chili Lime Peanuts

With only 3 simple ingredients….TJ’s Chili Lime Seasoning + Peanuts + Lime juice…these peanuts can be tossed in your mouth by the handfuls for a healthy snack or as an addition to any meal for a little something extra.

The tradition all started many sundays ago while the boys were waiting for Sunday dinner to be done. As a healthy snack, I threw some peanuts at them not expecting the delicious treat they were going to conjure up!

And it was created…the Clifford sunday snack-before-dinner.

And boy is he proud of these and wants {and does} cart them to every friend and family gathering.

And without a doubt, they are 99% of the time enjoyed by all!

INGREDIENTS:

  • Peanuts
    • we have tried many different versions of peanuts, and the best being UNSALTED, ROASTED PEANUTS. Because the seasoning has salt in it, if you used the SALTED variety, i’m afraid it would blow your blood pressure out of the water.
  • Trader Joe’s Chili Lime Seasoning
    • this is the KEY ingredient i’m sorry to say.
    • If there is not a Trader Joe’s near you, I did find it on Amazon for an unusually high amount ha. But, if the ox is in the mire….
    • You can experiment on the ratios for what is right for you and your family:) My favorite is 1:1. {ie: 1 cup peanuts : 1 tsp seasoning}
  • Lime juice
    • This ingredient is vital for the sticking on of the seasoning to the peanuts. It also adds a really nice fresh taste!

VERY IMPORTANT:

The 1% Jude’s chili peanuts were NOT a hit is when we made them too far in advance….like 20 min. We made them BEFORE a gathering. So when we arrived at our destination and pulled out our Chili Lime Peanuts they were soggy!! It was a shame and we had to throw them ALL away.

So, word to the wise…make them RIGHT before you serve them…or eat them yourselves.

WAYS TO ENJOY THEM:

  1. By the handfuls and mouthfuls…
  2. On top of a salad for a nice zing!
  3. As a topping for a baked sweet potato…the lime and the seasoning provide the perfect “dressing”.
  4. A complement to your Asian food take out
