These 4 ingredient Easy Pickled Peppers are made with honey and take just min to make! They are a healthy way to spice up any dish and are so convenient to have on hand!

Like a [very happy] broken record, mom does it again! During covid we ate these little morsels by the handfuls….and then drizzled the pickled juice over the top just for a salty measure. They are delicious in any variety and it’s just one more way to enjoy your veggies!

Have you ever HAD a pickled pepper?? Pickled peppers are easy to use and fun to have in the fridge. They taste awesome topped on a salad, they are a great way to spice up a sandwich or just to pop in your mouth! And they involve only 4 ingredients and take only 4 min to make. [well, plus the pickling part in the fridge…the longer they have to marinate in the fridge, the better the pickling, however, if you only have an hour or 2….they will taste just fine:)]

INGREDIENTS for EASY PICKLED PEPPERS:

  • Sweet mini peppers
  • Distilled white vinegar
  • Honey
  • Salt

the METHOD:

STEP #1: Boil white vinegar + honey [can also use white sugar] = boil until dissolved. Set aside.

STEP #2: Slice mini peppers from the end to the stem in approx. 1/8 in slices. Place in large mason jar.

STEP #3: Pour vinegar/honey mixture over peppers and seal with the lid. Let pickle in the fridge.

DONE and DONE!

HOW do WE USE healthy PICKLED PEPPERS:

We use them on tacos! And with these homemade refried beans! So yummy!

Or on top of these tostadas!

These easy healthy pickled peppers are delicious on sandwiches…and I adore them on salads. They are also yummy on avocado toast or just to pop in your mouth for a healthy snack. Thus, eat them anyway you like! Also able to be pickled is these Red Onions.

Description

These easy 4 ingredient pickled peppers make a delicious condiment to any salad, on top of a sandwich, in a wrap or as a snack! 


Ingredients

Scale
  • 32 ounce empty jar with tight fitting lid
  • 4 cups Sweet Mini Peppers, sliced into rings
  • 2 cups white vinegar
  • 2 Tablespoons honey
  • 2 tsp salt

Instructions

  1.  Place sliced peppers in the clean jar and set aside.
  2.  In medium saucepan, boil vinegar + honey + salt stirring until the salt and honey are dissolved.
  3.  Pour hot mixture over peppers, leaving appro 1/2 at the top of the jar. Seal the jar tightly. 
  4.  Allow 24 hours in the refrigerator for best flavor.
