The Original Blondies (with broiled coconut caramel topping)

For over TWO decades, these BLONDIES have been making people smile. They are the brownie without the chocolate, the “what in the world is in these” dessert and add Coconut Caramel on top and you have become the queen of the party.

There are a few tried and true staple desserts “TO TAKE TO A PARTY” and no matter the health kick I am on, these will always be in my EASY and DELICIOUS TAKE TO A PARTY recipe log. I have two desserts in my childhood- no fail-everyone loves-makes friends take to party recipe logs…The other is the CRACK BROWNIES topped with Marshmallows and chocolate frosting. Also will kill you but tastes good going down.

These are a dessert bar that will always remind me of my childhood. The era of “no such thing as too much sugar for a kid” as long as they eat it! ha! My mom started making these BLONDIES long before I remember and I grew up knowing they made people happy. She made them for me to take to Football games, school dances, friends houses and for my boyfriends and their families:) Everyone loved them. I passed on the tradition and brought them to my first job selling RV’s in Utah, to the night shift of nurses in the ER in Newport Beach CA, and now to the elementary school picnics in New York City. Every time I take them…they receive the same reaction.

And, "these are so rich:) They can't be good for you" -It likes they think I said, "hey try these sugar bars made with SUGAR and BUTTER. They are very healthy for you. haha

And "these are so good! What in the world is in them?"

They are rich and decadent. They should be made on occasion and all you need is a small piece:)

The recipe originated from Better Homes and Gardens Cookbook.

But the Original book!

Not the most recent copy which is probably 10 years old. The most recent recipe calls for baking soda, however, the baking soda makes them too cakey. SO USE THE RECIPE BELOW!!! It is tried a trillion times over and is proven to work.

THE BLONDIE BAR

NGREDIENTS: (only 7)

  1. BROWN SUGAR
  2. BUTTER
  3. FLOUR
  4. BAKING POWDER
  5. EGGS
  6. SALT
  7. VANILLA
  • Cream the butter and sugar, add the eggs and the dry ingredients. There is no such thing as over mixing or making sure you have room temp eggs. As long as you beat the butter and sugar until creamy….(which can take 3-4 min) these babies are FOOL PROOF!
  • Bake at 350 for 20-25 min until a toothpick comes out clean. (If adding the coconut caramel, make while the blondies are baking!)

The Broiled COCONUT CARAMEL on top

This step is really actually unnecessary. But I would be doing a disservice to my childhood to NOT include it. It adds a layer of richness and decadence and you may only be able to eat one bite-it is a really good bite:) And if you or your child has an end of school year picnic, a wedding or a championship game- then why not celebrate!

BLONDIES MIXING

INGREDIENTS for the COCONUT CARAMEL TOPPING

  1. UNSWEETENED COCONUT
  2. BROWN SUGAR
  3. EVAPORATED MILK
  4. BUTTER
  • Melt the butter over medium heat. Stir in remaining ingredients.
  • Once the blondies are done baking and the toothpick comes out clean. Open the oven and without removing the blondies—pull out the oven rack and spread the coconut caramel mixture over the top. Turn the oven on BROIL, push the pan back in and watch carefully while the coconut bubbles and turns golden brown. Once brown, crackly and toasted, it is done!
  • Let cool and watch the people swoon!

Description

These BLONDIES are a classic fail proof bar that will be sure to please any crowd. They come together quickly in 45 min…broil the top with Coconut Caramel for an extra sweet punch.


Ingredients

THE BLONDIE BAR

  • 2 cups packed brown sugar
  • 1/2 cup butter [softened]
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • *White chocolate chips optional

COCONUT CARAMEL TOPPING-

  • 1  1/3 cup unsweetened coconut flakes
  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 1/2 cup evaporated milk

Instructions

  1. preheat oven to 350 degrees.
  2. cream butter and sugar
  3. add eggs, one at a time
  4. stir in vanilla
  5. add dry ingredients
  6. spread into greased 13×9 pan.
  7. bake for 25-30 min until top is golden brown.
  8. COCONUT CARAMEL TOPPING-
  9. melt butter
  10. stir in other ingredients
  11. lather oer the top of blondies when done. {leave in the oven and just open the oven door, pulling out the rack]
  12. turn oven to broil and WATCH carefully as it bubbles and and the coconut turns golden brown.
  13. remove and let cool. Cut and watch your party guests swoon.

**TRIPLE recipe for a half cookie sheet.
