Dairy free Chocolate Pudding {made with Coconut milk}

This dairy free chocolate pudding is a 10 min, quick go-to dessert that EVERYONE will love! It’s made with unsweetened coconut milk (in the carton), unsweetened cocoa, cornstarch and sugar. It comes together so easy and will be a hit at any gathering to fit any special diet!

My love for pudding comes from many a nights slurping JELLO brand Instant Pudding after dinner. And if it was a real special night…then my mom would make the Cook and Serve variety. That was all the fad and it was quick and easy and a family favorite.

She would always make it and then store it in these cute little glass (actually maybe my 8 year old mind thought they were fancy and glass and really they were just plastic…because what smart mom gives 5 children fancy glass dessert dishes).

Anyway, she would make it in the microwave and then quickly divide the pudding into these “fancy” dessert goblets, place seran wrap over the top and place them in the fridge.

It was all I could do to not eat it until it was cold. Because if you didn’t know, pudding is very good warm too:)

Fast forward many many years….to the time when making pudding from a box is not kosher anymore. Mostly because have you seen the ingredient list on the back of that cute yellow jello box? And more importantly–have you ever tasted the pudding made from scratch. Because if you have, you won’t be going back to that box. (just has my mother)

I have a rendition of vanilla pudding that is TO DIE FOR…but this particular recipe I’m now sharing is for the Chocolate Variety. In honor of National Chocoalate Pudding day of course.

It’s DAIRY FREE, GLUTEN FREE and LOW FAT!

ingredients

INGREDIENTS:

  • Coconut milk
    • unsweetened coconut milk from a carton (NOT the can…it doesn’t need to be that concentrated.) However I’m sure it would make a deliciously rich and thick pudding if you used it. It would also be a lot more fattening.
  • Granulated sugar
  • Cornstarch
    • takes the place of the eggs. Therefore it is NOT an eggy pudding
  • Unsweetened cocoa powder
  • Vanilla extract
  • Butter

the PROCESS

  • Combine all ingredients dry ingredients first and mix well. Add milk.
  • Bring to boil (in either a microwave or stove top)
  • Boil for 10 min
    • MICROWAVE- if using a microwave, set time for 10 min and stir every 2 min.
      • If still not thick, just add more time and continue to stir every 2 min.
    • STOVETOP- Place in saucepan and stir stir until comes to boil…and then keep stirring. If you stop then the cornstach will clump together.
  • Remove from heat and add vanilla and butter
  • Strain to remove all excess clumps…if you are worried
  • Cover with seran wrap and place in fridge
    • it prevents that film from forming on the top as it cools. I promise you want to do this step. You will be very happy you did:)
  • When ready to eat, if it appears gelatinous…because of the cornstarch…there is a cure! The cure for this is whipping with a hand mixer. It becomes so whippy and airy and lovely!

15 min Dairy free Chocolate Pudding {made with Coconut milk}

Ingredients

Scale
  • 1/4 cup unsweetened cocoa powder 
  • 3 cups unsweetened coconut milk *
  • 3/4 cup sugar
  • 1/4 cup cornstarch
  • 1/4 tsp salt
  • 1 1/2 Tablespoon butter
  • 1 1/2 tsp vanilla

Instructions

  1.  Combine all dry ingredients in large saucepan (or large microwave bowl)
  2.  Add milk and bring to boil, stirring constantly to prevent lumps and clumps.
  3. Boil for 10 min or until the pudding is thick and coats the back of your spoon. (If using microwave, stop microwave every 2 min and stir x 10 min)
  4. Remove from heat and add butter and vanilla. 
  5. Strain if you believe you have lumps. (I always strain JUST in case)
  6. Enjoy warm or cold! (see notes)
  7. Remove from heat and
  8. Strain if you think there are clumps!

Notes

* Use the carton coconut milk…NOT the canned.

**You can also use Unsweetened Almondmilk or soy milk

If using cold and it appears as if it has become gelatinous…just whip it with hand mixer and it will become fluffy!
