Daily Provisions Kale Salad

This hearty kale salad has the necessary crunch from the crispy chickpeas, the protein from the hard boiled egg, a smooth finish with avocado and sprinkled with cheese.

Kale Caesar Salad - Serves 4 | Daily Provisions

The Kale Ceasar Salad is my personal favorite. It has hard boiled eggs, crispy chickpeas, celery, caesar vinaigrette and grana padano (aka a cheese).

My version is as similar as I could get:) with some added bonuses.

INGREDIENTS of my adapted Daily Provisions salad:

  • Chopped kale
    • Make sure you cut off the thick stem and chop small for easy eating
  • Crispy Chickpeas
    • Preheat oven to 400 degrees.
    • Rinse and drain chickpeas, spread onto parchment lined sheet, spray with olive oil and sprinkle with salt and pepper.
    • Roast for 20 ish min or until crispy.
  • Pistachios
    • I prefer roasted and salted
  • Hard Boiled Eggs
    • Watch the video for easy peeling πŸ™‚
  • Celery
  • Avocado
  • Sharp White Cheddar (Unexpected Trader Joe’s cheddar is my favorite)
    • We have also used feta
  • DRESSING: 1 tsp lemon juice + 1 tsp garlic + 1 tsp olive oil/TJ’s Green Goddess Dressing
  • *Rotisserie Chicken (optional but a good addition if you don’t need it to be vegetarian)

the DRESSING:

I’m not a big fan of salad dressings. In my opinion, if it’s a GOOD salad then you don’t NEED a dressing because it has many other great ingredients that taste awesome without a dressing. Aka, creamy avocado, juicy fruit, cheese, lemon juice etc…A salad dressing just drowns out all the other flavors and makes a salad taste ONLY like the dressing.

However, if you are a salad dressing person-that’s fine, just don’t use so much that you can’t taste all other the other great things in the salad! Trader Joe’s Green Goddess Salad Dressing is a valid option. It’s very low fat and garlicy—and not too strong.

OR simply toss together

1 tsp minced garlic + 2 tsp lemon juice + 2 tsp olive oil

and mix! It will be lemony and garlicky and yet you will still be able to taste all the lovely ingredients in your salad.

ASSEMBLY:

Place all ingredients in a pretty salad bowl and mix!

This easy Kale Salad, inspired by Daily Provisions in NYC, comes together in min and has all the needed ingredients to make it healthy, crispy and delicious! Chopped kale + Hard Boiled Eggs + celery + avocado + crispy chickpeas + pistachios!


Ingredients

Scale
  • 3/4Β  package of chopped kale salad
  • 1 avocado, diced
  • 1/2 package of TJ’s Unexpected Cheddar Cheese, chopped
  • 3 hard boiled eggs, chopped
  • 1 stalk celery, chopped
  • 1, 15 ounce can of chickpeas
  • Green Goddess Dressing TJ’s (or dressing of your choice)
  • Rotisserie chicken, optional

Instructions

  1. Preheat oven to 400 degrees.
  2. Rinse and drain chickpeas. Spread out on parchment paper lined pan and spray with olive oil spray. Sprinkle with salt and pepper.
  3. Roast chickpeas for 20 ish min or until crispy.
  4. Mix crispy chickpeas together with all other salad ingredients.Β 
  5. If using homemade lemon dressing= Mix lemon juice + olive oil + garlic. Drizzle over the top.Β 
  6. Enjoy!
