tuesday tip: EASY Stuffed Grilled pineapple (with bbq chicken)

Looking for an easy way to heat up the Grill this summer?? Well look no further! Try to stuff a pineapple with BBQ shredded chicken! Its easy and requires only 3 ingredients….a pineapple, some shredded chicken and BBQ sauce.

the PINEAPPLE:

  1. Shave off the sides with a serrated knife….(our cheese knife actually worked the best for us)

2. Whittle around the core with a long skinny knife…you may need to go around the core a few times to make sure the core is loosened. When brady sold kitchen tools and gadgets, we had access to many excessive kitchen tools- one including the pineapple corer. It is fun and bulky and maybe unnecessary but if you’ve got one! This is your chance to use it!

3. Grab your nearest funnel for easy funneling of the chicken. (or make a funnel very easily).

the CHICKEN:

  1. Cook in the insta pot or crock pot per directions:)
  2. Take your hand mixer and do quick pulses to easily shred your chicken! (or dump the chicken in the stand mixer and turn on low)
  3. Pour your favorite BBQ sauce over the chicken. Easy!
  4. Start funneling in through the top. I used a skewer to poke the chicken down. It’s pretty helpful! You also may have to flip it upside down and stuff chicken in from the bottom.
  5. Sometimes the pineapple breaks while coring. That’s what the TWINE is used for. It’s easiest if you stuff it and THEN twine it.

the GRILL:

  1. Once the pineapple is tied and stuffed, put on the grill for about 2-3 min each side.
