HOW TO GRILL CORN WITH THE HUSKS!

grilled corn on the grill

This grilled corn on the cob (with the husk) is a unique way to enjoy the delicious summer vegetable in just 15 min.

Perfect for a Father’s Day weekend! It involves the grill, and it’s for your Father’s.

Do you volunteer to cook Father’s Day dinner? I mean, not like you don’t cook them EVERY OTHER meal…but you will ‘offer’ to cook this one. Like it would be your treat haha. After all, it’s Father’s Day—and even though you were going to cook anyway, by offering it makes it feel more special. RIGHT?

ok well this recipe includes one things many dad’s profess to love. THE GRILL. And if you are like me, although I like to impress, I actually would prefer to leave the meat grilling up to the men in my life who LOVE it. Like my dad. He loves the grill. I like it but don’t love the sloppy meat juice and having to carry it out to the grill. I know, its silly but its true. I would much rather grill vegetables than meat.

So, this weekend we are grilling corn for Father’s Day! And it’s pretty darn easy and pretty fool proof.

The first place to start is to gather your corn.

How to pick GOOD corn on the cob

This can be like watermelon…you may think you have a good cob or a good melon and then you open it and its bad. There are a few tips for picking the RIGHT ears of corn.

#1: Open the corn husk to see what’s underneath, if it looks like the top has already been enjoyed by bugs, then toss it back in and try another cob. Keep searching until you pull down the husk and find the corn to be mostly intact. It is pretty common ( as you will find as you keep searching) that there will usually be kernals that have been eaten on the top. Just don’t get the corn if there is a large chunk of corn already eaten.

#2: Make sure the individual kernals don’t have dimples in them. This means they are old and have over grown their little tiny home. They would be find to eat, just may be tougher than the young vibrant corn.

#3: Don’t buy it if it is $1 an ear. That means it is out of season and you surely won’t find a good ear.

How to GRILL corn on the cob

Grilling corn on the cob gives it a smokey grilled flavor and looks so pretty in the husk! The one time consuming part is someone in your party has to remove the yarny hair on the individual cobs prior to grilling it. But it’s fine. You can do it!

This is a very easy NEW way to cook corn and with very little clean-up. That equals a definite win in my kitchen!

Corn is so tasty and sometimes the plain old boil way can get a LITTLE bit boring.

Since summer is here and the BBQ is probably already heated….go ahead and buy some corn and grill it along with the rest of the meal!

STEPS:

#1- Make sure you choose the best corn available to you by peeling back the top and looking for dimpled corn kernals. If they are dimpled (or seem smooshed together) they are old cobs and may not be the best tasting. Keep looking.

#2- Peel back the husks and remove the silk strings. This is an excellent job for any 5-10 year old. So start hiring! (however being careful not to tear the husks because without the husk you can’t grill it with the husks!)

#3- Carefully replace the husks back over the corn.

#4 – Fill the sink/large bowl/unscented garbage bag with water and 2 Tablespoons of salt.

#5- Drop the corn in the water so it is fully emerged. Let sit for 10 min. This helps with grilling so the husks don’t burn.

#6 – Shake off the excess water and turn on grill.

#7- Brush the corn with melted butter and herbs (salt and pepper) if desired. Fold husks back over the corn.

#8- Grill corn for 15-20 min. or until the kernals are toasty roasty. (you may have to rotate them and keep cooking…just keep an eye on them)

#9- Enjoy with more herb butter or alone! They are sooo very good you will never want to settle for boring boiled corn again.
